This cook started with a 15 pound Prime brisket from HEB.
6:29: Fire is ready! We all got up fairly early so Mark and Race could prepare the wood.
7:05 a.m. The seasoned meat- coarse black pepper and kosher salt- goes on the fire.
11:14: First peek. Lookin’ good!
2:21: Ready to wrap!
It gets wrapped in uncoated pink butcher paper for the rest of the cook in the oven.
Make it snug.
